One-Pan Baked Feta Pasta
Ingredients
Cherry tomatoes
1 block feta
1 shallot
4 garlic cloves
Fresh thyme
Olive oil
Salt
Black pepper
Red pepper flakes
Pasta
Parmesan
Fresh basil
1 lemon (zest)
Burrata (optional)
Panko breadcrumbs
Instructions
Heat oven to 425 degrees F.
Add the tomatoes, shallot (separated into layers), garlic, thyme (not stems), olive oil, pepper, red pepper flakes, and a light pinch of salt to a baking dish. Place the feta in the center and drizzle with more olive oil.
Roast for 30–40 minutes until the tomatoes burst and the feta is golden.
Toast the panko in olive oil for 3–5 minutes until golden, then turn heat off and add a handful of the grated Parmesan, some lemon zest, and a pinch of salt. This will serve as a crumble that mimics mac n’ cheese crust.
Mash the feta, tomatoes, garlic, and shallots into a sauce.
Stir in the lemon zest, chopped basil, grated Parmesan, and the cooked pasta. If necessary add more red pepper flakes, salt, pepper.
Finish with a generous amount of the toasted panko cheese crisp, more Parmesan, fresh basil, a drizzle of olive oil, and burrata if using.
